Stuffed Rice Balls

Ingredients in this Recipe

1 cup all purpose flour
1 cup fresh or frozen peas
1 pound ground beef
1 teaspoon tomato paste
1/2 cup chopped onion
1/4 cup extra virgin olive oil
1/4 cup finely diced celery
1/4 cup grated carrots
2 cups fine, dry bread crumbs
2 cups grated Pecorino Romano cheese
2 cups short grain rice, such as Carnaroli or Arborio
2/3 cup vegetable oil
4 large eggs
5 cups Chicken Stock, canned reduced sodium chicken broth or water
One 14 ounce can Italian plum tomatoes (preferably San Marzano) with juice, crushed
Salt
