1 cup Margarita Mix (liquid and with or without tequila)
1 cup Wild Rice (Wild and Brown mixed is what I used)
1 Garlic Clove, minced
1 medium Onion, cut into 1/8ths
1 Red Bell Pepper, cut into 1" 2" pieces
1 Scallion, minced
1 teaspoon Black Pepper, fresh ground
1 teaspoon Chipotle Chile Powder
1 Whole Chicken Breast (or two halves)
1/2 teaspoon Ancho Chile Powder
1/2 teaspoon dried Mexican Oregano
1/4 cup Extra Virgin Olive Oil
1/8 teaspoon dried Oregano
16 Cherry Tomatoes
2 Yellow Squash, cut into 1" pieces
3 cups Chicken Stock
