1 can (15 oz.) chickpeas, drained and rinsed
1 cup water
1 large sweet potato, peeled and cut into 1/2 inch cubes
1 small yellow onion, chopped
1 Tbs. chopped fresh ginger
1 Tbs. curry powder
1 Thai or jalapeÃ±o chili, seeded and finely chopped
1/2 cup canned diced tomatoes, drained
1/2 cup frozen peas
2 garlic cloves, finely chopped
2 Tbs. canola oil
Salt and freshly ground pepper, to taste
Steamed basmati rice for serving (optional)
